Ingredients:
1.5 lbs ground chicken
½ cup breadcrumbs
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese (plus extra for topping)
3 cloves garlic, minced
1 egg
¼ cup milk
1 tbsp fresh parsley, chopped
1 tsp Italian seasoning
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Preparation:
Preheat oven to 375°F (190°C).
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, egg, milk, parsley, Italian seasoning, salt, and pepper. Mix until well combined.
Form the mixture into meatballs and place on a lined baking sheet.
Top each meatball with a sprinkle of mozzarella cheese.
Bake for 20–25 minutes, until meatballs are cooked through and cheese is melted.
Garnish with fresh parsley and serve hot.
